Easy Sweet Apple Chicken Sausage Pasta Recipe


You will love this easy Sweet Apple Chicken Sausage Pasta Recipe. It is perfect for weeknights when you are in a pinch for time but you still want to put a wholesome, homemade meal on the table. I developed this Chicken Sausage Pasta Recipe with Zippy of Champagne Living for a cooking competition sponsored by al fresco. I really dig al fresco’s gluten-free, all natural chicken sausages and they are fully cooked. They make this pasta recipe even more simple to make.  We served this chicken sausage pasta recipe with a tasty Orange Sriracha Carrot Salad on the side and some garlic bread sticks.

The cooking competition was five teams with two people to a team.  We all shared a common pantry and we each had a different surprise basket of ingredients so we had to come up with a recipe on the spot.  We had 10 different fully cooked al fresco chicken sausages to choose from.  Our basket of mystery ingredients turned out to include spinach, tomatoes, feta, carrots, and parsley.  We chose the Sweet Apple Chicken Sausage to compliment our basket flavors.  And… these recipes won the dinner round of the cooking competition! The combination of chicken, apple, and spices creates a delicious taste profile that complements the other ingredients in the pasta. Chicken sausage is often considered a healthier alternative to pork sausage because it tends to be lower in fat and calories. Choosing sweet apple chicken sausage reduces the saturated fat content compared to traditional pork sausage, making it a lighter option.

We whipped up this healthy Sweet Apple Chicken Sausage Pasta right over a camp grill fire by boiling the pasta in a dutch oven and cooking the pasta with sauce in a cast iron skillet. Here’s a simple and delicious recipe for sweet apple chicken sausage pasta. This recipe serves 4.

Chicken Sausage Pasta Ingredients

  • 1 box of penne pasta
  • 8 clove of garlic smashed or pressed
  • 3 tbsp of extra virgin olive oil
  • 1 package of al fresco Sweet Apple Chicken Sausage
  • 2 cups of washed spinach leaves
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of feta cheese
  • 1 tbsp of salt

So simple. Seven ingredients and you have a quick and easy sausage pasta recipe that tastes amazing!

How To Make Chicken Apple Sausage Pasta:

Bring a large pot of water with 1 tablespoon of kosher salt to a rolling boil. Add pasta and cook until al dente. Then drain.

Meanwhile, in a large skillet or frying pan, heat olive oil and add garlic. Slice al fresco’s sweet apple chicken on the diagonal. Saute at medium heat to medium-high heat until fragrant and then add the al fresco Sausage and saute trying to get a bit of color on the sausage.  Stir in spinach and cooked pasta. Cover and let spinach wilt for about 3 minutes and then add tomato halves. Spinach and tomatoes are the perfect combination. Cook for another 2 minutes.  Serve the Spinach, Tomato, and Chicken Sausage Pasta onto a plate or bowl and garnish with a sprinkle of feta.

Notes:

  • You may substitute parmesan cheese for feta cheese.
  • Al Fresco Roasted Pepper and Asiago Chicken Sausage would be a good substitute for the Sweet Apple as would their mild Italian style chicken sausage.
  • You can grind a little fresh black pepper on top or sprinkle a few red chili pepper flakes, if you desire a little extra flavor.
  • Goes well with a dry white wine.

You could serve the Sweet Apple Chicken Sausage Pasta all by itself but it is also delicious served with my Orange Sriracha Carrot Salad and some garlic bread sticks.

Orange Sriracha Carrot Salad Recipe:

Orange Carrot Salad Ingredients

  • 4 carrots (heirloom purple, yellow, and orange carrots make for an extra pretty salad but any will work)
  • 2/3 cup parsley, finely chopped
  • 1 cup of feta crumbles
  • 1/2 cup of fresh squeezed orange juice
  • 1/4 cup of fresh squeezed lemon juice
  • 1/4 cup of olive oil
  • 1 tsp of sriracha hot sauce

Sriracha Carrot Salad Directions

Slice top and bottom of carrots and peel.  Then slice carrots into thin circles.  In a serving bowl, add carrot slices, parsley, feta, orange juice, lemon juice, olive oil, and sriracha.  Mix well and serve.  The judges really enjoyed the creativity of this carrot salad and especially the orange sriracha sauce flavors.

It was so much fun to see all the different chicken sausage recipes that everyone created for the al fresco cooking competition!
