Easy Oven Roasted Broccoli With Parmesan

I LOVE broccoli. I love it as a side. I love it in a casserole. In baked dishes. With cheese. By itself. I just love it. But I’ll admit, steamed broccoli gets old. Steamed broccoli, while yummy, is tricky. Too long and it’s soggy and disappointing. My favorite way to enjoy broccoli is oven roasted. The final product is extra full of broccoli flavor and slightly crispy. It is MUCH more forgiving with timing and all around just right. Here are 5 reasons you will love it too:

1.Flavor Boost: The high heat of the oven causes caramelization and brings out the natural sugars in broccoli, creating a slightly sweet, nutty flavor with crispy, browned edges. This browning process adds savory, complex flavors you can’t get from steaming.

How To Make Roasted Parmesan Broccoli

Start with fresh broccoli. You CAN roast the frozen stuff, but it won’t come out nearly the same. The frozen broccoli already has a lot of water in there, which is what we’re avoiding entirely by roasting. Cut it into small pieces, or large pieces, really whatever you want.  Personally, I enjoy bite-sized pieces, so I cut them into fairly small pieces.

Toss them on a cookie sheet, and mix with 2 TBS olive oil and about a teaspoon of salt. Use your hands, it’s the only way to go!

That’s ALL the prep.  Then you can just stick them into roast during the last 15-25 minutes of your meal’s cooking time.

When you’re ready, pop it in a 425-degree preheated oven. Depending on how small you cut them, these guys cook fast in high heat.  After about 10 minutes, you can go ahead and flip them or give them a stir around. When they’re fork-tender after about 15-25 minutes of total cook time, pull them out. I like them only lightly roasted so I do 15 minutes total cook time but if you like yours lightly browned, you might want to go for 20-25 minutes. Then, give them a sprinkle of freshly grated parmesan cheese.

Next, stick them under the broiler for 1 final minute. Watch CLOSELY while under the broiler. Just 30 seconds can make a big difference. One minute is usually perfect to start it melting on there with a bit of browning.
