MONTICELLO — The Paxton institution Just Hamburgers is coming to Monticello.
The new location will be located across from Monticello High School.
Just Hamburgers General Manager Jon Frichtl said the business had been considering Monticello for a while.
“We have long been fans of Monticello,” he said. “It’s a great community and we already have some name recognition in the area.”
Frichtl said the community reaction that came with their announcement has been exciting.
“It feels great to be coming in with some excitement already there. We believe Just Hamburgers will be a good fit,” he said.
The business has been in Paxton for more than 50 years and features smash burgers, fries and shakes in addition to roast beef, hot ham sandwiches, baked beans and more.
“Our food is simple, delicious and reasonably priced,” Frichtl said.
The original owner, Skip Parcel, is featured on the restaurant’s logo and his recipes are still used today.
“We cut and grind all of our own burger in house and our fries are always fresh,” Frichtl said. “We will be open Monday thru Saturday from 11 a.m. to 7 p.m.”
In April 2022, Just Hamburgers had a brief closure after the previous owners retired.
By August 2022, it reopened under the ownership of Brendan Healey and Todd Thorstenson.
“Our Paxton location has been going well since reopening three years ago, and it felt like a good time to bring Just Hamburgers to another community,” Frichtl said.
He said they hope to have the Monticello location open by August.
“We would love to be open in time for high school football season,” he said.
